The Food And Drink Blog ? Authentic Mexican Recipes: Not As Simple ...

For someone who hasn?t been to Mexico, the idea of authentic Mexican recipes usually involves tortillas and beans. They see things wrapped in tortillas and imagine the burning sensation of hot chiles in their mouth.

As a person who has been traveling through Mexico for a long time, I cannot say that tortillas aren?t popular?they are. Corn has been around for ages in Mexico, long before it was ever called ?Mexico?. The long-gone ancient tribes of Mayans, Aztecs, and other civilizations believed that corn was a gift of their gods, and it has since trickled into almost every single part of modern Mexican cuisine, including drinks like ?atole.?

With regards to the chiles, traditional Mexican recipes are seldom as spicy as people suppose them to be. The reality is that spicy Mexican recipes served outside of Mexico are usually even spicier than the authentic Mexican recipes served inside the country, at the real Mexican restaurants, and this is primarily due to Mexicans using chiles not just to add heat to a dish, but to layer on additional flavor. In the Mexican food you find abroad, in Mexican restaurants across the globe, you?ll often find a hodgepodge of ingredients taken from Mexican cuisine, Tex-Mex cuisine, and the local cuisine, mixed together and wrapped up in a tortilla, as though the tortilla makes it ?Mexican?, and then you?ll have the insanely hot chile salsa off in the corner for those who want to burn their mouth to hell.

But this is not at all what true Mexican food is like. The peppers used in authentic Mexican recipes are utilized for the purpose of actually bringing something meaningful and sensible to the dish: they contribute flavor that blends well with the others. These peppers are mixed in with the rest of the dish properly, not simply added on top to make the dish hot. It?s a different way of using them, and it results in dishes that have a very different taste and appeal.

So it is true that tortillas are everywhere in Mexico; and chiles are used in many different authentic Mexican recipes, but they are used in a much more natural way, and there is a lot more variation to the cuisine than the stereotypes suggest. Authentic Mexican recipes vary a lot inside of the country, with different states serving up their own regional cuisines and variations on the same dishes. Some regions favor taco recipes with pork meat; whereas other parts of the country will mostly use steak meat for their tacos. Also in the states bordering Guatemala, a lot of fruit from the tropics is use in the Mexican recipes, but you won?t find anything like that in the states that border America. No matter where you are in the country though, you?re bound to be only a short distance away from some street stall or restaurant serving up one of the world?s most famous cuisines: authentic Mexican food.
